So are you ready for a great healthy, easy to make meal in about 40 minutes.

Here we go. This is what you’ll need to start off.

Coconut Oil or Extra Virgin Olive Oil, 4 Skinless Chicken Breasts, 2 Roma Tomatoes cut into slices and A Bag of Mozzarella Cheese

(You can always use a bigger pan and larger portions if your feeding more folks)​

Take a a casserole baking pan and smear with with a little coconut oil then you’ll want to take 4 chicken breasts and lay them in the pan side by side.
   ​Now take some Basil Pesto, and spread it generously over each breast. Take slices of Roma Tomatoes and place then over the chicken breasts. Now you’ll want to sprinkle a generous portion of shredded Mozzarella cheese over it all.
   ​Place it uncovered, in a preheated oven at 400 degrees for about 40 minutes
After 40 minutes take your pan out of the oven and it’s ready to eat after you plate it along side on a nice little piece of garlic bread and a great glass of of your favorite wine.
   ​If your not much of a chicken fan you can substitute beef patties for the chicken breasts. Top with the pesto, tomatoes , spread your favorite spaghetti sauce over the tomatoes then add the Mozzarella on top. Cook for 40 minutes and your ready to eat.
